From the rugged highlands of Hayma Dakhiliya, this rare peaberry lot comes from 11 near-inaccessible mountaintop villages where coffee has been grown for centuries. Handpicked cherries enter Qima’s fresh cherry supply chain for Carbonic Honey processing, a water-free honey method combined with carbonic maceration to respect Yemen’s environmental limits while enhancing flavour diversity.
The cup is vibrant with concord grape, golden raisin, and warm spice notes of clove and nutmeg, a clear, lively expression of Yemen’s highland terroir shaped by tradition and Qima craftsmanship.
