Together, we reimagine plated desserts as fleeting works of art—creations built from delicate layers, contrasting textures, and bold, expressive flavors. Each dish reflects a shared commitment to craft, origin, and changemaking: the same values that define Qima’s tree-to-cup philosophy. This partnership transforms dessert into an immersive experience, designed to surprise, delight, and elevate every moment at the table.

Menu highlights from the Jesús Escalera Collection
Banana Toffee Crackle. A crackling cocoa shell giving way to banana ice cream, brown-butter financier, stewed banana, ribbons of honey toffee, and caramelised pecans.

The Black Forest. A whimsical reimagining of the classic with chocolate logs, Amarena cherries, almond layers, rich ganache, praline, cherry pâte de fruit, vinegar jelly, cocoa streusel, and a ruby-chocolate finish with cherry sorbet.

The Pistachio Project. A crisp chocolate-pistachio shell filled with aerated pistachio mousse, mandarin purée, pistachio sponge, and pistachio sorbet on toasted crumble.

Fleur de Verre. A delicate ‘glass flower’ of yogurt and rose foam, strawberry–balsamic infusion, honey-spiced sponge, caramel spheres, fresh berries, and crystallised rose petals.

The Qima Coffee Cup. A rich chocolate cup layered with coffee mousse, soaked sponge, hazelnut praline, and espresso toffee, finished with a glossy chocolate lid.

Qima Basque Cheesecake. A crustless cheesecake baked at high heat for a golden, caramelised top and a creamy, custard-like centre.
