Notes of Raisin, Nutmeg, Cherry Juice, PomegranateFrom the highlands of Hayma, near Sana’a in Yemen, comes Al-Haymatain Peaberry, named after the regions of Hayma Kharijiya and Hayma Dakhiliya. The name is rooted in the Arabic word Al-Hima, meaning a protected or enclosed place, reflecting this naturally fortified landscape of mountains and valleys where coffee has been cultivated for centuries.Hayma holds special significance as the first region where Qima began its work in coffee nine years ago. Since then, Qima has built water reservoirs, distributed coffee seedlings to renew orchards and preserve Yemenia genetics, delivered hands-on farmer training, and returned record-breaking prices to Hayma’s farmers through the Best of Yemen auction.Across both Hayma regions, the coffee trees belong to the Yemenia genetic lineage, an ancient population of Arabica found only in Yemen and preserved through generations of traditional farming. Peaberry beans, a natural mutation where a single seed develops inside the cherry, make up just 5 to 10 percent of any harvest, adding to the natural scarcity of this lot.Part of the Revolutionary range, this coffee reflects Qima’s belief that value lies not in exclusivity, but in responsibility. Rare in quantity and rarer still in integrity, it represents the highest expression of Qima’s research, genetics, and farmer partnerships, redefining rarity through progress with purpose.

Notes of Blackberry, Honeycomb, Juicy, Floral From the highlands of southern Ethiopia, known for fertile soils and clean, expressive flavour profiles. This single-origin coffee is grown at nearly 2,000 metres above sea level and cultivated by smallholder farmers on small family plots. The coffee ripens slowly in the cool mountain air, building natural sweetness and balance.The cherries are sun-dried whole using the traditional natural process, giving the cup a soft fruit character and gentle depth. Familiar, comforting, and quietly expressive, it’s an everyday coffee that never feels ordinary.

Notes of Roasted Hazelnut, Olive Oil, Whipped Cream & Chocolate CakeMadagascar is an island, and that isolation has shaped its coffee. With limited access to modern high-yield varieties, many farms have continued to grow traditional Bourbons, preserved over generations. The island is also one of the world’s most important reservoirs of coffee genetic diversity, home to numerous wild Coffea species found nowhere else and critical to the future resilience of coffee.This coffee comes from the Itasy region in Madagascar’s central highlands, where around two hundred smallholder farmers cultivate coffee between 1,200 and 1,500 metres above sea level. Volcanic soils and cooler temperatures slow cherry development, building structure, clarity, and depth.Grown from heirloom Red and Yellow Bourbon varieties introduced in the nineteenth century, the coffee is washed, a process that highlights precision, balance, and definition in the cup.This is the second coffee from Madagascar to feature at Qima Café. Textural, expressive, and composed, it sits firmly within Best Served Bold, selected for coffees that stand apart through character, integrity, and flavour.
