Madagascar is an island, and that isolation has shaped its coffee. With limited access to modern high-yield varieties, many farms have continued to grow traditional Bourbons, preserved over generations. The island is also one of the world’s most important reservoirs of coffee genetic diversity, home to numerous wild Coffea species found nowhere else and critical to the future resilience of coffee.
This coffee comes from the Itasy region in Madagascar’s central highlands, where around two hundred smallholder farmers cultivate coffee between 1,200 and 1,500 metres above sea level. Volcanic soils and cooler temperatures slow cherry development, building structure, clarity, and depth.
Grown from heirloom Red and Yellow Bourbon varieties introduced in the nineteenth century, the coffee is washed, a process that highlights precision, balance, and definition in the cup.
This is the second coffee from Madagascar to feature at Qima Café. Textural, expressive, and composed, it sits firmly within Best Served Bold, selected for coffees that stand apart through character, integrity, and flavour.
